The polarising varietal famed by Bordeaux's Right bank and dethroned by the movie Sideways in 2004. Fruit is from Hollick vineyard in the Coonawarra. This is my expression of Merlot; unconventional and modern drinking. Fruit picked and destemmed left to kick off into wild fermentation. Daily monitoring of the cap to not over extract. Only kept on skins for 6 days before free-draining (never pressed), then finished fermentation in a flex tank. Drink now or in 3-5 years.
