PURPLE FOG collected on a mild morning. Forming at 570m elevation in the mid-latitudes of Saturn. Suggestions of an obscure red fruit with a green tingle, the mouthfeel is mysteriously smooth. Encompassing the palate and flooding the head region, this liquid jives to SATURNS RYTHMS. Now or later. 50% Syrah, 30% Merlot, 20% Cabernet Sauvignon. Syrah and Merlot underwent CARBONIC MACERATION, whole bunch ferments. Cabernet was destemmed. All parts had wild yeast parties. Pressed to neutral American oak barrels for a couple of moonths, or three. Blended and bottled with a dusting of sulphite. Malo-lactic fermentation an on-going concern. SATURN that which concerns ripening or all that is finest within the grape. The third and very important phase of wine production.
