50% Chardonnay 10% Savagnin and 40% Pinot Noir, Trousseau & Poulsard.
From organically farmed, 20+ year old vines planted on grey marl and limestone. Fruit is hand harvested and fermented with natural yeast in stainless steal tanks, before secondary fermentation in bottle and 30 months aging on lees before disgorgement. Lovely bubbles.
