After the soft pressing used for the white wine Leonia, the second pressing is pressed with extended exposure to oxygen and maximum extraction. The fermentation continues without skins in stainless steel containers. Aged in concrete tanks. The amber colour comes from a concentration of the colour, not from maceration.
