Hand-harvested grapes, aged on skins for 271 days, made with zero winery additions, sulphured at bottling and grown with love by the Freeman family from their efforts to convert to organic farming. On the nose it's plenty of dried ginger, eucalyptus, there is a herbal amaro-medicinal note. As it opens there is savoury aged sake notes. Fresh bright acidity powering through the bold chalky tannin.
