Grapes bought from Florent Bacconier and the Rozel family, in Drôme. Manual harvesting. Complete destemming, two months of maceration with daily punch-down or pump-over, aging for 7 months in tinaja (Spanish terracotta jars) of 1000 litres. Unfined, unfiltered, bottled at the Estate with a micro dose of sulphur. An unexpected profile for a skin-contact wine. The finesse and delicacy of the aromatics overlook a tannic structure present but not drying. Saline and exotic fruit aromas.
