Castelmaure is a 102-year-old co-op based in rocky Corbières in France’s southwest.
They make unfussed, guzzleable wine from well-farmed plots around the region and have cultivated long-term relationships with many of their intergenerational farmers. This is 60% grenache, 40% carignan, both hand-picked and carbonic macerated for a plush, jubey rouge that is best drunk slightly chilled with something salty and fatty—as you would in the 11th!
