Carto 2021 Skinsy Chardonnay

Brendan, the winemaker is a chef by trade who ventured into the natural wine world in 2014 creating, Carto Wines.
Brendan Cato aka Carto Wines uses hand picked fruit from certified organic or organic practising vineyards across NSW, and SA. Two picks of Chardonnay from Rosnay Organic Farm, Canowindra NSW. First pick was destemmed and left on skins for 10 days, whereas the second was whole bunch pressed. Tart, with a lovely subtle honey, oxidative finish.
