Fruit was picked early for natural acidity, de-stemmed and crushed then left on skins for a few hours to extract texture and flavor before pressing. Juice was settled over night with no additives, then cloudy juice was racked to tank and neutral barrels (50/50) for natural fermentation. The wine was left on gross lees for twelve months for complexity and texture before blending to tank to rest for a further three months. Bright lifted nose – oyster shell, preserved lemon and vanilla panacotta. Lemon tart, tropical Calippo, sherbet lemon bomb finish. Take it to the park. Start a riot
