2022 Cabernet Franc

Notes from the winemaker Owen:
This 2022 Cabernet Franc was made using grapes sourced from the Macedon Ranges from the subregion of Glenhope. It is a light-style Cabernet Franc with a finer tannin structure and a lifted fruit-forward pallet. Production is limited with just over one tonne of grapes producing seventy cases of wine. The parcel was split into three components; one third was sealed in a picking bin to undergo full carbonic maceration for 27 days after which it was destemmed and fermented until dry. The remaining two thirds were split in two with half left as whole bunch and the other half destemmed. Each portion was then combined to complete fermentation. Nine months of barrel aging was carried out in seasoned barrels allowing the wine time to complete full malolactic fermentation.
