Sparkling 2023 is made from Viognier grapes from the sandy red soils of Hilltops NSW, picked a little on the earlier side for lemon squash zippy goodness. For us, Sparkling 2023 is the perfect pét nat across all weather with its crisp acid line cutting through the creamy texture of the lees which brings beautiful length and complexity.
